Recipe: brown chicken in olive oil on all sides, then remove and add the sofrito ( peppers , garlic & onion)

  • 1 -4oz can of tomato sauce to pot. Seasoning: oregano 1 tsp, salt & pepper to taste.
  • 1/4 tsp cumin, 2 bay leaves.
  • 1/2c bitter oranges ( naranja agria)
  • Add 1/2 c white wine, 2 c chicken stock, 2 -3 potatoes, 1 diced tomato, corn sliced, carrots.
  • 1 green plantain, olives 6-8.
