They really know how to combine great food with wine pairing to your delight. Empanadas trace their origins to Galicia and Portugal. From their medieval debut, empanadas have evolved into a mainstay delight enjoyed by people all over the world. In this episode, Jeff Murphy creates a sweet, simple and tasty dessert using the empanada as his inspiration.


Ingredients

• 2 whole wheat tortillas
• 1 tsp unsalted butter
• 1 large ripe banana, sliced on the bias
• 1 pinch of granulated sugar
• 1/2 tsp fresh ginger, diced finely
• 1/2 tbsp honey
• 1 tbsp prepared caramel sauce
• Cinnamon sugar mix
• Vanilla gelato of your choice

Directions

Melt butter in saucepan then add banana slices and sugar. Caramelize bananas for a few minutes. Spoon the caramelized bananas onto the half sides of the tortillas then spoon honey around the edges. Fold tortillas in half.

Toast or grill the banana empanadas until crispy then cut into wedges and plate. Sprinkle on the cinnamon-sugar mix then top with your gelato of choice and caramel.
